Sweet Corn Croquette



2 cups Sweet Corn
2 tablespoon Capsicum
2 tablespoon Green chilli
1 teaspoon Crushed Red chilli
2 tablespoon Corriander leaves
1 cup Bread crumbs
Salt to taste
Oil to fry

For white sauce
2 tablespoon Butter
3 tablespoon maida
1/2 cup milk

For batter
3/4 cup maida
Salt to taste
Water as required
Mix all ingredients to make a thick batter.

Preparation for white sauce

1. Heat 2 tablespoon butter, put maida and saute till the raw smell goes away.
2. On low heat pour milk slowly, stirring continously.
3. Add salt
4. Cook till the batter thickens.
5. Take off the stove and let it cool

Preparation for Croquettes

1. Into the cooled white sauce, add corn, capsicum, green chilli, red chilli flakes, corriander leaves, and salt.
2. Mix well and make rolls of equal size, shape into croquettes (cylinderical shape)
3. Mix 3/4 cup maida, salt, water, make a batter. Dip the rolls in maida batter.
4. Roll in bread crumbs and deep fry.

Tip: Brush with oil. 200 degree centigrade for 15 minutes (turn half way)
